Onyx, the latest addition to the Marki & Co group, reinvents French gastronomy with bold, refined cuisine that takes you on a journey. We tried it out for you and here are our thoughts.
Opened this summer, Onyx is the new must-try restaurant in Paris’s 9th arrondissement, a stone’s throw from the Opéra and the Grands Magasins. This restaurant, the latest addition to the family-run Marki & Co group (Sphère, Ao Izakaya, TO, Shiro…), offers a culinary experience created by two exceptional chefs: Tetsuya Yoshida, the group’s executive chef, and Benjamin Marotine. Together, they revisit French gastronomy, infusing it with inspiration from their travels and experiences. Their signature? Tangy, bitter and spicy flavours that enhance classic dishes, transforming them into surprising and refined creations.
A decor combining tradition and modernity
Designed by the architectural duo ANEGIL, Onyx is renowned for its warm, contemporary ambience. The building has an ‘Eiffelian’ structure with a magnificent graphic glass roof and a skylight that bathes the main room in light. An imposing central bar in walnut adds a touch of conviviality, becoming the focal point of the place. It creates a harmonious link between the dining room and the staircase leading to the other areas of the restaurant. This architectural setting further enhances the culinary experience by providing an elegant setting in which to enjoy your meal.
Refined and bold cuisine
During our visit, we had the privilege of tasting several dishes from the menu, showcasing the mastery and originality of the chefs. For starters, we began with salmon gravlax combined with ajo blanco, creamy bottarga and crunchy fennel with roasted almonds. A perfectly balanced blend of textures and flavours that won us over! Another interesting option was the yellowtail, served with a bergamot ponzu sauce, black quinoa salad and smoked Greek yoghurt, with hints of kumquat and chives.
For the main courses, we opted for the snacked octopus, enhanced by a beetroot condiment, spinach, tuberous parsley, preserved lemon and pine nuts. A preparation that does honour to this exceptional product. Our second dish, the Black Angus beef fillet, was a pleasant surprise, with its crispy polenta and mushroom and black garlic condiment, accompanied by roasted red treviso.
Finally, on the dessert side, the signature Paris-Brest literally conquered our palates. On the menu, a crispy choux pastry filled with an intense pecan and hazelnut praline cream, enhanced by a caramelised vanilla ganache and roasted nuts. For a lighter touch, the vanilla panna cotta and its crunchy almond-vanilla praline, accompanied by a milky veil and vanilla ice cream, was a success.
