In autumn 2024, chef Eloi Spinnler made waves with Colère, his second restaurant, tucked away in Paris’s 9th arrondissement. Renowned for his sharp, distinctive style, the young culinary prodigy continues his exploration of the seven deadly sins. With Colère, he presents a generous, committed interpretation of his “healthy angers”, serving a responsible, fiery and vibrant form of gastronomy.
Colère goes straight to the head and… the taste buds
At Colère, fire is masterfully controlled. While the name may suggest an explosion, here, spice is considered, nuanced, and balanced. A pepper enthusiast, Spinnler draws on his travels to infuse his dishes with heat — all without overwhelming more delicate palates. The menu unfolds in three acts: the trigger, the expression, the resolution — a true culinary ode.
Dishes are designed to be shared, encouraging discovery. At lunchtime, a set menu priced at €18, €23 or €28 offers a taste of fresh, ever-changing cuisine. On weekends, the evening à la carte menu is also available at lunch, promising an elevated experience at any hour. True to his values, Eloi Spinnler enforces a strict zero-waste policy in his kitchen — a philosophy born of his dismay at the food waste he witnessed during training in prestigious establishments. Here, nothing goes to waste: everything is considered, repurposed, and elevated. It’s modern, generous, and committed cuisine.
A majestic setting with a touch of Greek tragedy
Colère is also a visual spectacle, crafted by Friedmann & Versace. The moment you step inside, every detail tells a story: handmade tableware created in partnership with the Faïencerie de Gien, bronze-patinated walls by Atelier Paty, textured tiles by Les Céramiques du Beaujolais… And, as the centrepiece, a majestic lion-shaped fireplace hand-sculpted by Gesso, inspired by the grotesque masks of the Italian Renaissance.
Also on the menu: leather banquettes embroidered with phoenix motifs, and vibrant red accents on chairs and flooring. The façade even features a sculpted god, the very inspiration behind the restaurant’s name. The soundtrack? Classic 80s and 90s rap — the raw musical embodiment of emotion.
The (divine) dishes we sampled
We began with the volcanic eggs with mayonnaise — an eye-catching, flavour-packed starter that awakens the appetite without overpowering it. Special mention to the irresistible mayonnaise, which envelops everything in silky smoothness.
For the main course, the duck breast with mashed potato and fine slices of raw apple was a true showstopper. The duck, served pink, sliced like butter. Each mouthful delivered a burst of flavour, enhanced by precise cooking that preserved the meat’s tenderness. The mash, incredibly smooth, added a comforting contrast. A bold yet deceptively simple dish, executed with striking finesse.
To finish, the vanilla flan with chilli chutney brought the meal to a stunning close. The texture was melt-in-the-mouth, almost weightless, and the natural vanilla aroma was captivating from the first spoonful. Neither too sweet nor too sharp, the chutney lifted the flan beautifully — perfectly echoing Colère’s concept: food that shakes you up without ever causing harm. This dessert, flawlessly crafted, epitomises the restaurant itself: distinctive, expertly controlled, and unforgettable.
